Zucchini Smorrebrod

Smorrebrod is a delightful Scandinavian meal made up of a dense, nutritious bread topped with all kinds of good things, typically a spread of some sort, meat, and/or cheese. As variable as the imagination, it’s a lovely way to eat your fresh produce.


2-3 zucchini, diagonally sliced 1/4 inch thin

olive oil

salt and pepper

sliced hearty bread

cheese of any kind


Get a heavy pan really really hot. Brush the pan with some oil and lay the seasoned zucchini in the pan in a single layer, without crowding. Resist the urge to poke. prod, or otherwise move the zucchini around. Let them sizzle. Let them cook. Take a gentle little peek and if they’re browned, turn them over and do the same thing on the other side. Remove from heat.


Toast the bread

Spread the bread with the cheese of your choice.
