Ingredients:
Pea shoots
2 cloves garlic, minced
1 T. Sesame oil
1 T Brown sugar
2 tsp. Soy sauce
Fresh lemon, juiced (optional)
Instructions:
Mix the sesame oil, brown sugar and soy sauce in a small bowl.
Rinse pea shoots and shake dry.
Heat 2 T. olive, canola or peanut oil in a large saute pan (canola or peanut are best as they have higher smoke temps than olive oil, but it works well as long as you don’t get it too hot)
Add garlic and allow to sizzle for 30 seconds or until they begin to brown.
Add pea shoots and toss, allowing them to wilt slightly.
Pour in the sauce, and stir fry for another minute or until sugar is dissolved.
Remove from heat and squeeze fresh lemon juice over the top. To make a meal, serve with marinated grilled chicken, flank steak or tofu, over a bed of steamed brown rice or thick fat noodles like udon or lo mein.
