This recipe is another one of those basic building block recipes. You really don’t need to follow quantities or use specific ingredients, but here’s a great method:
Wash and spin dry your spinach. Place in a large bowl so you have plenty of room to mix. Drizzle just a bit of olive oil over the leaves. Gently toss them so they have a very, very light coating of oil. Add a splash of your favorite vinegar. Sprinkle a little bit of salt, and crack some fresh black pepper. Then, taste! Add more oil, vinegar, salt or pepper to your liking. Then, raid the fridge and pantry and add anything that catches your eye. You’ll be impressed what can taste good with a simple spinach salad!
1 # spinach, washed and spun dry
1 tablespoon extra virgin olive oil
1 dash balsamic vinegar
salt and pepper to taste
Optional add-ins: use one, two, or all! You can’t go wrong with a lovely base of spinach and balsamic vinaigrette. Here’s a few suggestions that we’ve tried and liked.
Hard boiled egg, sliced
Turkey, chicken, or ham, sliced or shredded
Cheese-blue cheese is a classic, but use what you have around!
Bacon-another classic
Dried fruits-we use cranberries and raisins all the time
Nuts-if you take a few minutes to toast them in a saute pan, you’ll be even happier!
