This recipe was generously shared by our member Julie M., as made by her mother and now her!
My mom usually made it with two cukes, but the recipe can easily be halved or doubled.
Ingredients:
2 cucumbers, thinly sliced
1/3 c. thinly sliced onion
1/2 c. white vinegar
1/4 c, water
1/3 c. white sugar
1/2 or 1 tbsp fresh chopped dill (I like plenty of dill with mine!)
Pinch of kosher salt
Combine vinegar, water and sugar in a small saucepan on medium-high heat. Once boiling, pour over cucumbers and onions and stir in dill. Add kosher salt to taste. Cover and refrigerate for at least an hour.
