Asian Lettuce Wraps



1 head bibb lettuce, (leaves taken off one at a time so they’re whole) washed and rinsed

1# ground chicken, beef or pork, or 1 package firm tofu cut into 1/2 inch dice

2 cloves garlic, minced

2 T. rice wine vinegar

2 T sugar

2 T soy sauce

chili pepper flakes, to taste

shredded radishes

thinly sliced green onions

shredded carrots


crushed peanuts


In a skillet over high heat, saute the meat or tofu. Add the garlic and saute until browned. Add the vinegar, sugar, soy sauce and chili pepper flakes, cooking until sugar is dissolved and sauce is bubbling. Remove from heat.

Make a salad by combining the radishes, onions, carrots and cilantro.

To assemble the wraps, place a heaping spoonful of the meat or tofu into a lettuce leaf cup, top with the fresh radish salad and sprinkle with the peanuts.
