1 1/2 or so pounds of broccoli
1/4 cup finely chopped onion
1/3 cup currants, sub raisins or cranberries if you’d like
3/4 cup whole almonds, toasted and chopped. Any other favorite nut or seed is great, too.
1/2 cup mayonnaisse
2 T. lemon juice
2 T. apple cider or rice vinegar
2 T. sugar
salt and pepper to taste
Shred the broccoli in the food processor. If you don’t have one, just finely chop the florets, and cut the stems into matchsticks.
In a large bowl, combine the broccoli, currants and onion.
In a smaller bowl, whisk together the mayo, lemon juice, vinegar and sugar.
Pour the dressing over the salad and mix well.
When you’re ready to serve, toss the nuts into the salad.
